Our goal is to provide an East Asian dining experience for all to enjoy. That experience starts with the ingredients. At Midori, our menu is completely vegan, dedicating our efforts on quality over quantity. Rather than stockpiling ingredients ahead of time, consumables are bought daily from local farms and oversea producers for natural freshness. Our suppliers methods are well-known and yield their produce through organic means. In essence, we hope our work with local farmers and producers will minimize the negative impact on the environment and remove any ethical concerns. When you dine at Midori, it embodies all the clean, hard work done by countless farmers. It's an experience worth remembering.

Our commitment to sustainability stems from the grassroots. The rice used in our sushi and famous bowls is cultivated in sustainable farms across California and Japan for taste and quality. Our nori and kombu seaweed products are handpicked from the clean waters of Japan, enriching all our dishes with authentic umami flavor. We collaborate with traditional artisans based in Japan and the USA for handcrafted soba and udon noodles, even though such specialized craftsmanship is rare. Fresh, organic, and locally sourced vegetables are purchased from sustainable farms that use no harmful chemicals. Careful attention is paid to ensure that every single ingredient is of the highest possible quality while also simultaneously using sustainable practices.

This tofu is made from non-GMO soybeans in a traditional wooden workshop where workers prepare food at wooden tables and cooking stations. Steam rises from cooking surfaces in this beautiful timber-framed space with abundant natural light streaming through large windows, creating an atmosphere that blends traditional craftsmanship with modern, sustainable food production techniques. The aroma of the freshly cooked meal permeates the room, creating a warm feeling and a sense of authenticity.

Our premium ingredients travel from farm to table using our entirely eco-friendly transport system. Our electrical-powered delivery trucks and vehicles, which run on biofuel handle local distribution, while our cargo ships use wind-assisted propulsion and solar panels to reduce emissions during ocean . For time-sensitive deliveries, we partner exclusively with airlines that utilize sustainable aviation fuel, reducing carbon footprint by up to 80% compared to conventional jet fuel. Our delivery scooters and forklifts run on electric power, ensuring that from harvest to kitchen, our ingredients maintain both quality and environmental integrity throughout their journey.

This energy is produced in wind farms like the one pictured above. Wind turbines generate clean electricity that powers everything from our cooking equipment to lighting. By teaming up with wind energy suppliers, like Vestas and NextEra Energy, we've reduced our carbon footprint over 75% in the last five years. The power produced by these wind farms is delivered directly to our grid-connect restaurants, and with every meal we serve, we're contributing to a cleaner planet. Our Mango Sticky Rice is a delicacy with mangos grown in Japan. We use a breed of mangos called the Miyazaki Mango, which is known for it's ripeness & rich taste. This is a high-end ingredient that is grown in its natural habitat (not a greenhouse).
